Our Favorite Pasta Dish

With having toddlers, I am always looking for kid friendly (and allergy friendly) recipes that are still healthy and have a variety of flavor the whole family can enjoy. We typically do regular spaghetti, or “sghetti” as Shayne calls it, with tomato sauce. Sometimes we add veggies, sometimes with a salad and garlic bread. But that gets boring so I was very excited when I saw this recipe by ohsheglows. It is quick, easy for those nights when I don’t want to make an extravagant meal. Yet it is so flavorful and creamy your taste buds will forgive you for only taking 15 minutes to prepare it.

15 Minute Creamy Avocado Pasta

Prep time: 5-10 minutes   Cook Time: 8-10 minutes

*Note: I did increase the measurements below to the ones I use these to feed our family of two adults and two toddlers with a bit of leftovers for anyone who wants seconds. The original recipe I link to above yields 2 servings, so a bit less than my measurements.

Ingredients:

12 ounces uncooked gluten free pasta (can sub regular pasta, just won’t be gluten free)

1 1/2 cloves garlic (increase to 2-3 cloves if you want it extra garlicky)

1/4 cup fresh basil leaves

10 teaspoons fresh lemon juice, to taste

1 1/2 tablespoon extra virgin olive oil

1 1/2 ripe medium avocado, pitted

1/4 – 1/2 teaspoon fine grain sea salt (I don’t measure this, just go by eye)

Freshly ground black pepper

Lemon zest, for serving
